Dinner for one = loathe it = not tonight = with Mrs Jangs Fried Eggs = scrummy ...


There's only one thing, yes only one thing,
that irks me about living alone ...
that's ...
dinner for one!

If I allowed myself I'd detest it ...
but what's the point of going on about it?

Usually I cook enough for two or three nights.

Tonight my taste buds are dancing ...


1/2 cup vegetable oil
2 free-range eggs
1 desertspoon oyster sauce
pinch ground white pepper
1/4 cup finely sliced spring onions (scallions)
red bird’s eye chillie, finely sliced

Heat oil in a hot wok until surface seems to shimmer slightly.
Crack eggs into a small bowl, pour into hot oil.
After 1 minute reduce heat to medium,
allowing the underside of eggs to become
firm and crisp – the yolks should still be runny at this point.
Carefully slide a spatula under the eggs,
then pour off and discard the oil.
Replace eggs and cook for a further minute till crisp.

Gently remove eggs from wok
drain off excess oil, ease onto a plate.

Drizzle eggs with oyster sauce, garnish with pepper,
spring onions and chillies.

I had the eggs with a small piece of grilled lamb rump ...

couldn't wait to tell you how scrumptious it was!

Devouring My Flea Market Finds = dinner for one ...

The result from Sunday's Flea Market Finds post HERE
Beautiful spinch taken off the stalk, steamed, then finely chopped, seasoned with a splash of olive oil, pink salt and ground peppercorns.
Baked yellow baby beets ... in the oven in baking paper on foil with half an onion and a smidge of oil plus s & p.
Chicken Patties ::
400 grams minced chicken breast from the best chicken store in Sydney,
mixed with ...
grated carrot,
finely chopped red onion,
parsely,
basil,
smattering of ground chicken herbs & spices from Gourmet Herb & Spice Co,
a swig of gluten free Organ corn crumbs, 
one egg.
Lightly fried in a hit of olive oil
AND
not a skerrick of fat or liquid had to be removed from the pan ...
gotta love Chicken George at Marrickville Metro, continually the best chicken products ever!  
Scrumptious!
